Avocado oil has a low acidity level and contains zero cholesterol and very little saturated ("bad") fats, but is rich in monounsaturated ("good") fatty acids. This is beneficial in helping to reduce LDL ("bad" cholesterol) levels. Moreover, the unique micronutrients that occur naturally in avocado help increase HDL ("good" cholesterol) levels in one's blood.
Having a high burning/smoking point (255 º C – compared to 208 º C in olive oil), avocado Oil is an excellent choice for various cooking techniques, including sautéing, stir-frying and deep frying.
