Olive Oils
There are essentially two categories of olive oil, Virgin and Refined. Virgin olive oil is obtained only from the olive which is the fruit of the olive tree. This type of olive oil has not undergone any type of refining treatment. Virgin olive oils are classified according to organoleptic (taste and aroma) and analytic (acidity level) characteristics. When an olive oil does not qualify as a virgin olive oil or is too high in acidity, it is refined to remove any defects or to reduce the acidity level.
