Extra Virgin Olive oil is defined by the International Olive Oil Council as having an absolutely impeccable taste and aroma, fruity and with an acidity level of less than 1%. Virgin Olive oil is similar except that its acidity level may not exceed 2%. Pure Olive Oil is defined as a mixture of refined olive oil and extra virgin olive oil with a maximum acidity level of 1.5%. Light Olive oil is also a mixture of Refined Olive oil and Extra Virgin Olive Oil (minimum 3%).
